Following the PDO Consortium dictates, throughout the year our members pay particular attention to the care of the plant and olive harvest for this oil. Their oil processing features cold extraction method for a unique low acidity oil with a spicy yet pleasant taste and with characteristic artichoke and almond aroma.
Upon being released for consumption, the extra virgin olive oil, with “Terra di Bari” guarantee of origin, plus “Castel del Monte” geographical indication, must meet the following characteristics:
– green colour with hints of yellow;
– intense fruity smell;
– fruity taste with an average bitter and spicy taste.
